This is a really delicious grilled steak full of wonderful Thai flavors. You do need to marinate it overnight, so keep that in mind. The overnight marinating is key to the intense and unbelievable flavor of the beef.

The original recipe called for skirt steak, but I didn’t have any in my freezer. I did have a fat ribeye, though, so once I thawed it, I sliced it lengthwise to get two large, thin steaks which would easily suck up the marinade I was going to make. And the ribeye was nicely marbled, so it stayed juicy and tender. Beef flap or flank steak are cuts is that would work well with this recipe.

1/4 cup toasted sesame oil
1/4 cup soy sauce
2 tablespoons grated ginger
2 tablespoons finely chopped garlic
2 tablespoons finely chopped cilantro
2 tablespoons chopped dry roasted unsalted peanuts
2 scallions, minced
1 tablespoon light brown sugar
1 tablespoon fresh squeezed lime juice
1 tablespoon chile oil
2 lbs. beef ribeye (or skirt steak or beef flap)
1/4 cup chicken stock (homemade is best)

In a bowl, whisk together the sesame oil, soy sauce, ginger, garlic, cilantro, peanuts, scallions, sugar, lime juice and chile oil. Transfer half of it to a shallow dish.

Add the steak to the dish and turn the meat to coat it well. Cover and refrigerate the beef overnight. Refrigerate the other half of the marinade in a separate container.

The next day, light a grill. While it’s warming up, get out a sauce pan and pour the chicken stock in along with the reserved marinade. Heat it to combine it well, but not letting it reach a boil. Remove it from the heat and let it come to room temperature. This will be the dipping sauce for the beef.

About 30 minutes before cooking, take the marinated steak out of the fridge and let it come to room temperature. Season it with salt and pepper, and grill it over high heat until it’s medium-rare, about 5 minutes.

If it’s too cold to light a grill, or if you just want to use the oven, heat a cast iron pan on the stovetop, add a few drops of avocado oil or pork fat, and sear the beef on both sides before placing it in a pre-heated 375° oven to finish cooking.

If you’re like me and you grill outdoors year ’round, this is for you. But in case of nasty weather, this works indoors as well.

I rarely order beef at a restaurant, because I can usually make a better steak at home. For one thing, I use humanely raised grass-fed beef, something few restaurants offer. And I can cook it for less than a third of the price of a steakhouse. Granted, most steakhouses dry-age their beef, a time-consuming process of taking slabs of beef and keeping them in a fridge for weeks until a certain amount of moisture is sucked out of the meat, intensifying the flavor. I’ve done that at home in my fridge, but it takes a lot of time and effort.

There is one steak that I couldn’t match for the longest time, and that was the Capital Grille’s bone-in Kona crusted dry-aged NY strip. I would have dreams about that steak! It was time to find a way to make something that would satisfy my craving for that amazing steak at home.

Looking at a variety of coffee rub recipes on-line, I started the slow and steady process of combining ingredients in just the right proportions, tasting as I went. What I came up with really accentuated the flavor of the beef I was cooking, better than I had imagined!

3 tablespoons brown sugar
1 tablespoon Kosher salt
1 tablespoon ground coffee (use your favorite)
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon unsweetened cocoa powder

 

Combine the ingredients, mixing well, and keep them in a tightly sealed container at room temperature.

The secret ingredients are the brown sugar and the cocoa. The brown sugar gives the steak a caramelized crust when cooking, and the cocoa rounds out the flavors and gives the beef an extra “umph!”

When using, sprinkle the seasoning liberally on both sides of the steak before cooking. When cooking indoors, I like to add bacon fat to a hot cast iron skillet, searing the steak on all sides, and then finishing it in the oven. But let’s face it: nothing beats the grill!

I think I spent half of my childhood in the kitchen, watching my Mom and grandmother make koldūnai (kohl-doo-nayh), the Lithuanian version of a pierogi, by hand, at lightning speed. They would roll a simple dough into a log about 1″ in diameter, then cut it into 1″ pieces, twirling each piece between their fingers to make a flat pancake, filling each with a small spoonful of meat or mushrooms, then folding it over, crimping the edges to make a crescent-shaped dumpling. It blew my mind that they could crank out over a hundred of these little masterpieces in no time, placing them on a cookie sheet and freezing them until it was time to cook.

 

 

One of the main reasons why I prefer Lithuanian koldūnai over the basic Polish pierogi is the filling. For me, standard pierogi fillings like potatoes, cheese, and sauerkraut just don’t cut it. My Mom would mix ground beef with chopped onions sautéed in butter, a couple of eggs, and milk crackers soaked in milk. She’d add salt and pepper, then spoon that beautiful beef blend into her koldūnai.

The other delicious stuffing, usually reserved for special holidays like Christmas Eve and Easter, was made from mushrooms. Italy may lay claim to the porcini, but the fact of the matter is, Lithuania is bolete heaven. (We call them baravykai.)

When they’re dried and rehydrated, their incredible flavor is so intense, you don’t need many of them to flavor a large amount of regular button mushrooms. We’d get our dried boletes from relatives in Lithuania every year. Mom would place a handful in some boiling water and let them steep until they swelled up and could easily be chopped and added to the other mushrooms. She’d then pour the mushroom liquid into the pan as well, not wasting a bit of that magical porcini flavor. The mushrooms were simply sautéed in butter, cooled, and then used to fill the koldūnai.

 

I found that my Mom’s log method was too much work. I roll the dough out into a sheet with a rolling pin, then cut circles with a glass. Yes, that’s mac-and-cheese up front!

 

A few years ago, I decided it was time to try my hand at making koldūnai. As I recall, my Mom simply mixed water with flour to make the dough, kneaded it into a log, and off she went. I decided to go with the rolling pin and glass cutting method, because I found it to be a bit easier creating more uniform koldūnai.

The biggest challenges I had making koldūnai was my own clumsiness and lack of experience. Once I got the hang of it, things moved along steadily, and it didn’t take long for me to make a decent batch–not all perfect, but not bad for a first try.

My recipe follows. If you’re on a gluten-free diet, have no fear! That recipe is at the bottom of the blog.

 

The rolling pin method.

 

This time around, I made four kinds of koldūnai: traditional (ground beef as well as mushroom) and non-traditional (mac & cheese and pulled pork.)  Patty’s Pierogis, a restaurant in nearby Fall River, Massachusetts, and featured on Food Network’s “Diners, Drive-Ins and Dives,” is where my daughter first had mac & cheese pierogis. She was instantly hooked and begs for them every year.

Here’s my beef recipe…

1/2 onion, finely chopped
1 pat of butter
1 lb. ground beef
1 egg
1/2 cup breadcrumbs

Finely chop the onion and sauté it in the butter until translucent. Let it cool, then add it to 1 lb. of thawed ground beef. Add the egg and the breadcrumbs. Season with salt and pepper. Mix the ingredients thoroughly and keep the meat in the fridge until you’re ready to use it.

In my childhood home, you cannot possibly serve koldūnai without sour cream on the side and without spirgučiai (spir-guh-chay), chopped and fried bacon and onions, that are sprinkled on top.

1 large onion, finely chopped

In a large pan, fry the chopped bacon until it’s almost crisp. Never drain the fat! Add the chopped onions and cook until they are soft. Set aside.  (My Mom always kept a stash of spirgučiai in a container in the fridge, and sprinkled them on anything and everything.)

Making the dough is simple.

2 cups all-purpose flour
1 cup water

I don’t use salt in the dough because I boil the koldūnai in salted water later.

Combine the ingredients in a bowl, mixing with your hands. Keep adding flour in small amounts until the dough isn’t wet and sticky. When it forms a nice ball, remove it from the bowl and place it on a floured surface and knead it a bit more. Cut the ball into quarters, and work with these smaller pieces of dough.

For the rolling-pin method, roll each quarter out until the dough is about 1/8″ thick. Cut circles out of the dough using a cookie cutter, rocks glass, or whatever else you have handy. Add about a teaspoonful of filling in the center of the dough (a melon baller works great), then fold the edges over and pinch them with your fingers. Flip it over and pinch again, making sure none of the filling seeps out. A tight edge means the koldūnai won’t break open when you put them in boiling water.

I recently discovered these “pierogi makers.” You lay the dough in them, add your filling, and then close them. They automatically crimp the edges for you. They work pretty well…sometimes. It’s faster with the traditional method.

 

I always double-check the crimped edges, because your koldūnai will fall apart in the boiling water if you don’t seal them well!

 

Place the koldūnai on a sheet pan dusted with flour, and when you’re done, place the sheet pan in the freezer.

Sometimes the chef gets punchy after making koldūnai all day long!

 

Get a large pot of salted water boiling. Drop the koldūnai in gently, being careful not to overcrowd them. If the dough is thin, the koldūnai will be ready when they float up to the surface. A thicker dough will need longer cooking. The best way to know if they’re done is by taking one out, cutting it open and having a look (and taste!)

When plating, sprinkle generously with spirgučiai, and serve with sour cream on the side.

If you need to go gluten-free…good news! You can still have your koldūnai! The mushroom filling is already gluten-free. For the breadcrumbs in the beef filling, I take slices of Udi GF bread, toast them, and zap them in a food processor. Excellent breadcrumbs! And I use store-bought GF mac-and-cheese.

Excellent GF flours.

1 1/2 cups all-purpose gluten-free flour (I use Cup4Cup)
1 1/2 cups rice flour (I use Cup4Cup Wholesome Flour)
2 eggs
pinch of salt
water

Combine the flour and salt in a bowl. Add the eggs and mix. (I use my hands for this.) Slowly add water to the dough until it pulls from the sides of the bowl and makes a nice ball of dough. I cut the dough in half and use a well-floured rolling pin to roll it flat.

 

The finished product! The rice flour gives it a darker, grainier texture. A more rustic taste, but still delicious!

These are also gluten-free, but I used a different recipe and a different brand of flour. I mixed 2 cups of King Arthur GF flour with one cup of water and 1 teaspoon of xanthan gum. Then I added more flour or water, depending what was needed, to get the right consistency. A very easy to work with dough!

 

 

This is a great way to impress your guests at a holiday dinner or any big celebration. (We’re actually having it for Thanksgiving, because my family  doesn’t want turkey!)

Buying a large roast is not an inexpensive proposition, so I wanted to be as sure as possible that it was going to come out right. I got to work, researching recipes online and watching every You Tube video I could find. Every chef and home cook had their own ideas of spices and rubs, but the basic methodology was the same: start the roast at very high heat to form a delicious crust on the meat, then bring the oven temperature down and cook it more slowly to bring the roast to a perfect medium rare.

A big 10-lb. roast is going to cost around 150 bucks, so the first step is simple: don’t skimp by buying a cheap cut of meat. You will absolutely regret it. Get the best meat you can afford. The reward you’ll get when you slice it in front of the family, with all those “oohs and ahhhs” will totally be worth it!

The second step is simple but very important: make sure the roast is at room temperature before cooking, and make sure the oven is really pre-heated properly to the right temperature before you put the roast in it. A cold roast will cook unevenly, and you won’t get that beautiful pink all the way through the meat when you slice it. It’ll be raw on the inside and overcooked on the outside. Take the roast out of the fridge for a good 2 hours before cooking…and if it’s frozen, back-time the heck out of it so that it’s truly thawed!

You can already see that back-timing is going to play an important part in a perfect roast. So, for example, if you want to be serving at 7PM, you need a half-hour (at least) for the meat to rest after cooking…about 2 hours of cooking time…and about 2 hours of bringing the roast to room temperature….give or take. Oven temperature settings vary, and roasts can be uneven. You’ll have to keep an eye on this thing.

That brings us to monitoring the temperature. If you have a basic meat thermometer, you’ll need to jab the roast a couple of times during the cooking process to know what temperature you’re at. I don’t like this method, because it means you’re pulling the roast out of the oven, dropping the oven temperature each time, and jabbing the meat, which releases juices every time you pull the thermometer out. I suggest investing in a probe that goes in the roast from the very beginning, and stays in the roast through the whole cooking process, monitoring the temperature the entire time. When the roast hits the perfect temperature of about 115 degrees, it beeps and lets you know it’s time to remove it from the oven. It’s practically foolproof.

The monitor I have is old school, as you can see, but it does the job. These days, you can get a wireless model that calls your phone when you’ve reached the ideal temperature.

My old monitor still works like a charm. I use it at Thanksgiving to get perfectly roasted turkeys on a Weber grill, and it works great here as well. The probe goes into the meat, and it’s connected to a transmitter. It also has a receiver that can be as far away as 100 feet from the roast, and it will signal you when the desired temperature has been reached. That means you don’t have to stare at the roast all the time. You don’t have to open the oven door all the time. You can actually enjoy a cocktail in the company of your guests or family while the meat cooks.

When it’s time to remove the roast from the fridge to bring it to room temperature, roughly chop the onions, carrots and celery and place them on the bottom of a roasting pan. Lay the roast on top.

The rub that you use on your roast is really a matter of what you like. Use the herbs and seasonings you love, and you can’t go wrong. Here’s my recipe for a 10 to 12-pound roast…

1/2 cup olive oil
1/4 cup Kosher salt
1 tablespoon black pepper
1 tablespoon granulated garlic
2 tablespoons granulated onion
2 tablespoons dried oregano
2 tablespoons dried thyme
2 tablespoons fresh rosemary, finely chopped

Combine these ingredients in a bowl. You want it to be like a paste or wet sand. If it’s too dry, add a little more olive oil. Dried oregano and thyme are usually fine the way they are, but fresh rosemary from the supermarket can be hard like pine needles. I either chop them really fine or I put them in a spice grinder. I have a small rosemary plant growing indoors by my window, so the needles are usually soft and wonderfully fragrant when I chop them up.

 

Seasoned and ready to cook!

 

Rub the seasonings all over the roast, making sure you get the bottom and the sides as well. Use it all up! You might think it’s too much salt, but remember: it’s a big hunka meat. Some of the seasonings will fall off. Be fearless!

To flavor the meat while cooking, I add a cup of red wine (optional) and 2 cups of beef or chicken stock in the pan with the vegetables. (In some cases, after the roast is cooked, you can use the juices at the bottom of the pan to make gravy. But give it a taste first. If you use a lot of salt on your roast, the juices could be too salty to use in your gravy. Gravy or not, a classic horseradish cream sauce on the side is a great choice. (The recipe is below.)

At least a half-hour before you want to start cooking, pre-heat the oven to 450 degrees. You really want it hot to start. Roast the meat at 450 for 20 minutes, then turn down the heat to 325 degrees.

This is where many recipes tell you to calculate how much more to cook based on the size of the roast, etc. If you’ve got a probe in the roast, you can see exactly how the temperature changes over time. If you decide that you’re going to “wing it,” you can go by the general math of 15 minutes per pound of meat, including that first 20 minutes. So, if you have a 10-pound roast, multiply that by 15 and you get 150 minutes. Subtract the first 20 minutes from that, and you need to cook the roast another 130 minutes at 325 degrees. This is by no means a guarantee of success, but a very general guideline.

If you have a standard meat thermometer, you know that you can safely leave the roast in the oven at least an hour before taking the first temperature reading. Then play it by ear. (Like I said, you don’t want to be opening the oven door and poking the meat all the time.)

Although I had my probe set at 120 degrees, I took the meat out at 115, removing the roast from the pan, and placing it on a cutting board (or another clean pan.) Then I wrapped the roast with foil, and covered the foil with a clean bath towel, keeping all the heat in, letting the meat rest for AT LEAST 30 minutes. The meat inside continued to cook and reached a temperature of 130 degrees before it started to slowly cool down. (If you leave the probe in while the meat is wrapped, you’ll actually see the temperature rise.)

After at least 30 minutes of resting, I unwrapped the roast and started slicing!

This is where you can pour off all the pan drippings and make a sauce if your spice mix wasn’t too salty or strong. As I mentioned, the classic horseradish cream sauce is great to serve with it…

1 cup sour cream
1/2 cup mayonnaise
6 tablespoons prepared horseradish (more if you like it!)
the juice of 2 lemons
1 tablespoon Worcestershire sauce

Combine all the ingredients, mixing well. Keep this refrigerated until it’s ready to serve.

I have to give credit for this recipe where it’s due. A few years ago, we traveled to Washington, DC, and one of our best dining experiences was at the Blue Duck Tavern, a stunning restaurant matched by its unique and beautifully prepared plates.

One of the most memorable appetizers I enjoyed was the roasted beef bone marrow, which had a delicious pretzel crumble on top. The moment I had a taste, I knew that I would have to recreate this for myself at home.

Bone marrow played an important role in the evolution of early man. Perhaps that’s why some of us still have that primitive craving for it.

Early man had small teeth and ate anything he could lay his hands on, especially meat. But he was no hunter. Attracted by circling vultures, he probably scavenged the leftovers from a big kill such as an antelope left in a tree by a leopard, or a large animal such as a wildebeest that had been slaughtered by lions.

Because meat is relatively easy to digest and rich in calories and nutrients, early man lost the need for the big intestines of apes and earlier hominids. This freed up energy for use by other organs. This surplus of energy seems to have been diverted to one organ in particular – the brain. But scavenging meat from under the noses of big cats is a risky business, so good scavengers needed to be smart. At this stage in our evolution, a big brain was associated with greater intellect. Big brains require lots of energy to operate: the human brain uses 20% of the body’s total energy production. The concentrated calories and nutrition found in meat was responsible for an increase in the brain size of early humans.

But around two million years ago, telltale cut marks on the surface of animal bones reveal that early humans were using crude stone tools to smash open the bones and extract the marrow. Stone tools allowed early man to get at a food source that no other creature was able to obtain – bone marrow. Bone marrow contains long chain fatty acids that are vital for brain growth and development. This helped further fuel the increase in brain size, allowing our ancestors to make more complex tools. Many historians believe that the blunt force required to break bones with tools to extract the bone marrow was a crucial ingredient in the development of the human hand, and the unique dexterity it has over that of apes.

Of course, these days, we can simply go to our butcher and ask them to slice some beef bones for us so that we can enjoy the marrow like our ancestors did. It’s much more civilized.

They key to roasting marrow bones properly is to keep an eye on them. The bones can go from frozen solid to blazing hot in no time, and that means the marrow can go beyond its rich, gelatinous perfection into a puddle of fat at the bottom of your pan in mere moments.

3 lbs. beef marrow bones (I like them sliced lengthwise)
3/4 cup finely ground salted pretzel sticks
1 teaspoon dried parsley flakes
1 teaspoon granulated onion
1/2 teaspoon granulated garlic
1/4 teaspoon black pepper
olive oil

I keep the beef bones frozen, moving them to the fridge until I’m ready to roast them.

Pre-heat the oven to 450 degrees.

Grind them up!

Place a handful of salted pretzel sticks in a food processor, and pulse them until the pretzels are ground fine. When you’ve got 3/4 cup of ground pretzel powder, move it to a bowl and add the parsley, onion, garlic and black pepper. (No salt is needed if the pretzels are salted.)

Lay the bones flat on a baking pan. If they wobble, place them on a layer of coarse salt to hold them steady. Sprinkle the pretzel mix on the bones, a little drizzle of olive oil on top, and place them in the oven.

Now you watch…there’s that one point where they go from “not quite yet” to perfection to “Oops! Too much!” …so be careful!

If you’re cooking gluten-free, try Snyder’s of Hanover GF pretzels. They are awesome…you’ll never know the difference.

Like hot dogs and Slim Jims, jerky is one of those “mystery meats” we love but don’t really know how it’s made or what part of the animal it comes from.
Really excellent jerky is a rare treat, and once you have it, you will never go back to that rancid, preservative-filled dog meat you find in a bag at the supermarket. And the best part is: it’s easy to make.
Although I started my jerky-making endeavors with beef, I later acquired some beautiful venison from friends and family; hunters that had extra meat they were willing to share. I quickly realized that venison was the ideal jerky meat: really flavorful, with a wonderful texture.

But venison is not all that east to find, and farmed venison is expensive. So beef is still the best option for most people.
Shop around for a really nice slab of London Broil or similar cut. You don’t need to buy an expensive piece of grass-fed beef, but the better the meat, the better the jerky. Remove all the gristle and fat that may be on the meat and then slice it against the grain and on a diagonal, into 1/4″ thick slices. Toss all the meat in a Ziploc bag. Once you’ve done that, all you need to do is make the marinade, marinate the beef overnight, and then dry it the next day. Your final product will be a flavorful beef jerky that is so good, you’ll find it very hard to stop eating it…or to share it.
If you use gluten-free soy sauce and teriyaki sauce (La Choy is the brand I use, found in any supermarket), this recipe can be considered gluten-free. Be careful: regular soy sauce, and even some tamari sauces, have wheat in them. Read the label!

1 teaspoon fresh minced peeled ginger
2/3 cup brown sugar
1 cup teriyaki sauce (I use La Choy)
1 cup soy sauce (I use La Choy)
8 lbs. raw, lean beef, like London broil, cut into 1/4″ thick diagonal slices, against the grain of the meat
Combine all the ingredients except the meat in a large bowl. Whisk it well. Place the meat in a large Ziploc bag, pour the marinade inside, seal it, and refrigerate it overnight. Squish the bag around once in a while, to make sure all the meat surfaces make contact with the marinade. Keep the bag in a bowl to prevent any accidental spillage in your fridge!
The next day, pour off the marinade and discard it. Using a food dehydrator, dry the meat by laying strips in a single layer. You can also dry them in a 140 degree oven on racks slightly elevated off a baking sheet. Drying could take several hours to half a day, depending on how dry and chewy you like your jerky, and how thickly you sliced it.

This recipe makes a lot of jerky, but it stores really well in the freezer. I put small amounts into individual freezer bags, then place all of them in one large freezer bag. Thaw as needed.

Out on the North Fork of Long Island, there’s a steak restaurant called the Elbow Room. It’s nothing fancy…old school cooking. But they’re famous for their steaks because of a super-secret marinade. Ages ago, I spotted a newspaper article that claimed they found out what that secret marinade was, and they published it. Whether this really is the official Elbow Room marinade or not, I have to say it’s pretty darn tasty and it makes for a delicious steak on the grill.

 

 

My biggest concern with the marinade was the salt factor, since it uses soy sauce. But the ribeye I had was almost an inch-and-a-half thick, which meant that it could sit in the marinade for a long time…my ribeye sat in it for 8 hours. If you choose to use a thinner cut of meat, you might need to reduce your marinating time.

The recipe uses a product called Gravy Master, available in most supermarkets. Look for it in the section where you find gravies and instant potatoes.

 

 

1 cup soy sauce
1/4 cup Gravy Master
2 large Vidalia onions
2 cloves of garlic
2 teaspoons celery seed
1/2 teaspoon black pepper

 

Combine the onions and garlic in a large food processor and purée. Add the remaining ingredients and run the processor until it’s smooth and sort of resembles root beer.

 

 

Marinate the beef in the marinade overnight, or for as long as possible. The thicker the cut of meat, the longer you can marinate it.

Looks delicious, but it hasn’t been cooked yet! Straight out of the marinade.

 

Light the grill. I prefer pure hardwood charcoal because that’s where the flavor is. If I’m just cooking one steak, I get my camping grill out. It lights quickly and easily, and it doesn’t waste a whole lotta charcoal.

 

Always use a charcoal chimney, never lighter fluid…unless you like the taste of petroleum products in your food.

 

Pure hardwood charcoal gives you a hot fire. I like to sear the beef really well on both sides, then move the steak to a cooler spot on the grill and close the cover. I’ll let the beef cook until it gets to a perfect medium-rare.

 

 

If you try this marinade on burgers–and it’s great on burgers–simply brush the burgers with the marinade as you place them on the grill. Go easy or you’ll get a very salty burger.

 

Marinated grilled ribeye with a side of fried rice…an easy combination of veggies and rice leftovers I had in the fridge with a dash of soy sauce.

 

 

 

I find little or no difference between the stove in my kitchen and an outdoor gas grill…so I don’t own one. I can make a perfectly delicious steak by searing it in a cast iron pan on the stovetop, then finishing it in a hot oven. So, for me, if the real reason for outdoor grilling is flavor, nothing can replace a hardwood charcoal grill.

Besides the quality and source of my beef, wood and smoke are what make the difference between a good steak and a great steak.

I know the #1 argument for going with gas over hardwood charcoal is time. “It takes too long to start a charcoal grill.” That’s completely untrue. It takes no more time to light a charcoal fire than it does to start up a gas grill.

Of course, it starts with the grill itself. The classic Weber is still an awesome choice. For larger cooking needs, I also have a Primo ceramic grill.

Then I get a bag of hardwood charcoal. I’m not talking charcoal briquets, like Kingsford, that have a ton of additives in them. And I’m definitely not talking about Match Light. I’m talking pure hardwood charcoal, easily found in supermarkets and home stores.

Next: a charcoal chimney. It’s a metal tube with a handle and a grate at the bottom. I crumble a couple of sheets of newspaper into the bottom, pour charcoal into the top, light it, and I have hot coals in 10 minutes without lighter fluid.

And I NEVER use lighter fluid! Why spend good money on a great steak only to make it taste like gasoline?

The variety of wood chips available for smoking is another flavor factor when it comes to grilling with charcoal. My personal favorite is hickory, especially when I’m cooking pork or chicken. But apple, cherry, oak, mesquite: they all impart their own unique flavors. And they’re all available in most home stores where you find all the other barbecue gear.

Although I have an electric smoker for those low-and-slow jobs, like a big ol’ brisket or pork shoulder, I don’t need it when grilling a steak. I simply soak some wood chips in water for about a 1/2 hour before grilling (I’ve found that hot water speeds the process up), drain the water, and then sprinkle the moist chips on the hot coals in my grill. I throw the meat on the grill, close the lid (opening the vents, of course) and off we go.

So now, in 10 minutes, I’ve got a grill that’s ready to cook a steak with…about the same time as gas.

If you say: “I don’t cook with charcoal because it’s so messy!” …I honestly don’t know if you and I can be friends.

Because I’m using a small amount of hardwood charcoal for the average dinner, I don’t have to clean out my grill every time I use it. After a while, yes, some ashes pile up in the bottom of my grill and I have to dump them. But because they’re pure wood ashes, I can dump mine into my strawberry or raspberry patch. They love the stuff.

You still have to clean a gas grill after a while, and it always runs out of propane halfway through cooking when you have guests over for dinner. So where’s the convenience in that?

Charcoal grills give you everything you could ask for: low maintenance, ease of use–no propane tanks, valves and igniters–real wood flavor, not lava rocks, and the thrill of cooking meat over a real fire, bonding with the caveman in you. Grab a beer–or even better: a bourbon on the rocks–and start grilling!

When I was a kid, no visit to a Chinese restaurant was complete without an order of those sweet, greasy and radioactive red spare ribs. They came in that foil-lined bag that barely kept them warm until my dad got us home to devour them along with the other classics: fried dumplings, and won ton soup with fried won tons on the side. I still see those ribs on menus even today, and despite my cravings, I just don’t eat fire-engine-red-dyed food anymore.

Imagine my excitement when I saw a recipe for those classic spare ribs in a food magazine. I figured I’d just make them without the food coloring. It totally worked.

I don’t think I’ve ever made a recipe exactly as written, and this was no exception. For one thing, it called for dry sherry. I didn’t have it so, I used dry marsala wine. I didn’t even have the pork ribs, so I substituted a beautiful slab of grass-fed beef flap. It was awesome. But using pork ribs and dry sherry in the same quantities you see here will totally work.

1/3 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons dry marsala wine
2 cloves garlic, finely chopped or through a press
2 tablespoons sugar
1/2 teaspoon Chinese five spice powder
2 lbs. beef flap (skirt steak or hanger steak works, too)

 

To make the marinade, combine the hoisin sauce, soy sauce, marsala, garlic, sugar and Chinese five spice in a bowl. Mix well.

Trim the excess fat and silver skin off the beef flap, and if it’s thick, slice it lengthwise to make a thinner piece of meat about 1/4″ to 1/2″ thick.

Place the meat in the marinade, making sure it gets well coated on all sides. Marinate the meat at room temperature for about 30 minutes. If you have a thicker cut of meat, you can marinate it longer.

Drain and discard the marinade.

Heat a cast iron pan and add a little lard or oil. Place the beef flap pieces in the pan, searing well on one side before flipping over to the other. If the meat is thin, you can cook it to a medium-rare right there on the stove top. You might need to finish the beef in a 350-degree oven if you’re using a thicker cut.

 

To make the Chinese ribs with this marinade: simply place the ribs and the marinade in a Ziploc bag at room temperature for 30 minutes. Pre-heat the oven to 350 degrees, and place the ribs on a baking sheet with a wire rack on top. Save the marinade…and baste the ribs with it every 30 minutes, turning the ribs over as you do so. Cook until the ribs are done, about 2 hours.

 

 

A LOOK AT GMO’S

The controversy over the positives and negatives of GMO’s continues, and I found an old blog from many years ago that I think is worth repeating. I think people that don’t think GMO’s are a bad deal probably don’t completely understand the situation.

My friends at FireFly Farms in Stonington, Connecticut, understood GMO’s better than most. Family owned and certified humane, they raised heritage breeds of pork, pastured chickens, and rare cattle.

Let’s imagine a world where there are two types of pudding cups.

The Blue Pudding Cup definitely will not hurt your kid.

The corporation that makes The Red Pudding Cup states that all the negative tests about The Red Pudding Cup are wrong and they have made lots of tests themselves showing that The Red Pudding cup is okay.

You know The Blue Pudding Cup is safe. There are tests both ways, remembering that many of the tests were funded by The Red Pudding Cup Corporation, so the best you can know is The Red Pudding Cup pudding will probably not hurt your kid. At least according to The Red Pudding Cup Corporation.

Which pudding cup would you buy to feed to your child?

One last thought…

Would it be okay for The Red Pudding cup to put their pudding into a Blue Pudding Cup so no one would know which type of pudding they are feeding their children… your children?
