I love cocktails that are full of herbaceousness. (Got that right without spell check!)

So whenever I’m dining in a higher-end restaurant, where I see that mixology matters to them as much as the food, I take advantage of their knowledgeable bartenders and have them create something special for me to try.

Coppa is a favorite restaurant in Boston–Toro is another–and both are part of the Ken Oringer/Jamie Bissonette empire. It’s been years since I visited, but the cocktails I’ve had there have always inspired me. This recipe is from Coppa, named “Hey Neon,” and is a personal favorite that I regularly re-create at home for myself.

Aquavit is a favorite in many a Scandinavian bar. Imagine vodka infused with caraway seeds, and you have a pretty good idea of what it’s all about, though there are other flavored aquavits as well.

Punt e Mes is a sweet vermouth from Italy, from the house of Carpano, the folks that also make the king of all vermouths: Antica Formula.

Cynar is a fascinating artichoke-flavored bitter liqueur from the folks that bring you Campari.

Chartreuse is naturally green in color, and they claim it’s made by Carthusian monks since 1737, from a secret recipe of 130 plants. There’s also a milder yellow Chartreuse.

1.5 oz. Aalborg aquavit
.75 oz. Punt e Mes
.5 oz. Cynar
.5 oz. green Chartreuse
Finely minced, dehydrated kalamata olives

 

Combine the liquid ingredients in a cocktail shaker with some ice. Stir briskly and strain into a rocks glass rimmed with the minced kalamata olives.

I tried mincing and dehydrating the kalamata olives, like they do at Coppa. But the oils in the olives kept them from drying out enough, even in a dehydrator. Maybe I was just too impatient for a drink! And I couldn’t get the minced olives to stick to the rim of my glass.

My solution was pretty simple: pour the drink into a martini glass and serve with a skewer of kalamatas. Works for me!

 

 

If I’m at a steakhouse and craving beef, I’ll usually order a cut like porterhouse or ribeye…great cuts of meat that need nothing more than a little salt and pepper, and a skillful grillmaster. The prep on that slab of meat before it even hits the grill has already been done: carving, dry-aging, trimming.

At home, we eat only humanely raised grass-fed beef. It’s expensive, so we buy the cuts that cost less, but need a bit of TLC before cooking. A cut like beef flap, which comes from the bottom sirloin butt (the back of the animal), looks like a skirt steak, a hanger steak, or a flank steak because of its thinness, but each comes from a different part of the animal.

Though the beef flap is somewhat thin, I will often slice it lengthwise into two thinner pieces, because the meat’s thickness often varies, which can give you uneven cooking. I like to cook it hot and fast on a hardwood fire grill, but still keep it medium-rare. If the weather is really unforgiving, cooking the beef in a hot cast iron skillet works well, too.

Marinades are the key to tenderizing and flavoring tougher or cheaper cuts of meat. What you put in your marinade really depends on what flavors you like.

The recipes below are for 3 to 5 lbs. of beef. I always make more, because leftover marinated grilled beef makes an awesome steak and egg breakfast the next day!

The instructions with all of these marinades is basically the same: combine all the ingredients in a bowl. Cut the beef flap (or whatever cut of meat you’re using) to a manageable size so that it fits a gallon-sized Ziploc bag easily. (Smaller, thinner pieces will also absorb the marinade better.) Place the beef in the bag, and then pour the marinade into the bag. Squeeze the excess air out and seal the bag. Gently squish the bag around so that the marinade makes contact with all the meat. Place the bag in a bowl in the fridge overnight, squishing the bag every few hours to make sure the marinade penetrates the meat. The bowl will prevent any accidents from happening in your fridge in case the bag leaks. The next day, remove the bag from the fridge and let it come to room temperature before grilling the meat. Discard the leftover marinade.

1/4 cup olive oil
1 lemon, zest and juice
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon garlic salt
1 teaspoon Dijon mustard

Combine the ingredients. Marinate the meat overnight in the fridge or several hours at room temperature. Grill.

On the North Fork of Long Island, in the middle of wine country, there’s a restaurant that’s been around for a long time: a sort of hole-in-the-wall place you might not think twice about visiting, unless you hear that they’ve got a special secret marinade for their beef. The place is called The Elbow Room (I think they’ve expanded to a second or third location by now), and though I wasn’t impressed by the quality of their beef, I was impressed with its flavor. Here, with the help of friends, is what we think comes as close to that marinade as we can get. Gravymaster is a product you can find in any supermarket, usually in the gravy section. This marinade also works well with beef tips or a London broil.

1 cup soy sauce
1/4 cup Gravymaster
2 large Vidalia onions
2 cloves of garlic
2 teaspoons celery seed
1/2 teaspoon black pepper

Combine the onions and garlic in a large food processor and purée. Add the remaining ingredients and run the processor until it’s smooth and sort of resembles root beer (below.)

This incredibly simple marinade falls into the “Italian” category. You could almost use it as an Italian dressing on salads, but it works really well as a marinade for beef.

1/2 cup olive oil
1/4 cup balsamic vinegar
2 teaspoons Kosher salt
1 teaspoon pepper

The balsamic vinegar I use is not the expensive aged stuff that costs a fortune. It’s the $9-a-bottle stuff you can find in any supermarket. Simply combine the ingredients. Marinate the meat in the fridge overnight or for several hours at room temperature. Grill.

I recently posted this photo of a Vesper martini I enjoyed, and had a lot of friends ask to have more details about it. The story of the Vesper martini is an interesting one. Make yourself one and read all about it. Cheers!
At first, it seemed almost silly to try to make one…but the classic James Bond martini has always fascinated me. I’m not talking about the clichéd Sean Connery “vodka martini, shaken, not stirred.” I’m talking about the real James Bond martini, which appeared in Ian Fleming’s first 007 novel “Casino Royale” and only appeared in the most recent “Casino Royale” motion picture starring Daniel Craig.

‘A dry martini,’ he said. ‘One. In a deep champagne goblet.’ ‘Oui, monsieur.’ ‘Just a moment. Three measures of Gordon’s (gin), one of vodka, half a measure of Kina Lillet.  Shake it very well until it’s ice-cold, then add a large thin slice of lemon peel. Got it?’ ‘Certainly, monsieur.’ The barman seemed pleasant with the idea. ‘Gosh that’s certainly a drink,’ said Leiter. 
Bond laughed. ‘When I’m … er … concentrating.’ he explained, ‘I never have more than one drink before dinner. But I do like that one to be large and very strong and very cold and very well-made. I hate small portions of anything, particularly when they taste bad. This drink’s my own invention. I’m going to patent it when I can think of a good name.’ 
He watched carefully as the deep glass became frosted with the pale golden drink, slightly aerated by the bruising of the shaker. He reached for it and took a long sip. 
‘Excellent,’ he said to the barman, ‘but if you can get a vodka made with grain instead of potatoes, you will find it still better.’ 
Bond named this drink the Vesper martini, after the character Vesper Lynd, portrayed by Ursula Andress in the 1967 adaptation, and Eva Green in the 2006 adaptation of “Casino Royale.”
My version of this classic drink remains true to the original, though I’ve changed brands due to personal preference. In the novel, Bond just asks for “vodka.” (Of course, this was back in the 1950’s when we didn’t have hundreds of brands to choose from!) My choice for best-bang-for-the-buck grain vodka is Tito’s. Made from corn, it has just enough of an edge, which is what this drink needs. But if I want to go for grain, specifically wheat, Grey Goose is certainly a good choice.
Bond asks for Gordon’s gin. I’m partial to Hendrick’s for this application. Again, in the 50’s, what good British agent wouldn’t drink Gordon’s?
And the original Kina Lillet had its formula changed in the 1980’s to keep up with the times by reducing the quinine, which made it bitter. The French aperitif wine, Lillet, is today’s version: a blend of wine grapes, oranges, orange peels and quinine. Lillet is not a vermouth, though you’ll find it in the vermouth section of your favorite liquor store. Some aficionados claim the martini is just not the same without the original Kina Lillet formulation, but I find that the drink works just fine for me.

3 oz. Hendrick’s gin
1 oz. Tito’s or Grey Goose vodka
1/2 oz. Lillet
I combine these over ice in a cocktail shaker, and shake vigorously. I strain it into a chilled martini glass. I’m happy with the lemon peel or olives.

A side note: the correct pronunciation of Lillet is Lih-LAY. Grammatically in French, the double-l would make it sound like Lih-YAY. So to keep that from happening, they spelled it Lilet for a while until the French were used to the correct pronunciation, then they went back to Lillet on the bottle.

Great fried shrimp is like sea candy…you just can’t get enough. This recipe is easy and really delicious. I never use anything but wild-caught American shrimp!

1 lb. wild-caught USA shrimp, peeled and deveined
1/2 cup all-purpose flour
1/2 cup yellow corn meal
2 tablespoons Paul Prudhomme Seafood Magic seasoning
1 teaspoon sea salt
1 raw egg, scrambled
avocado oil for frying

Combine the flour, corn meal, Prudhomme seasoning (see below) and salt in a bowl. Set it aside.

Scramble the egg in another bowl and set it aside.

Peel and de-vein the shrimp. Remove the entire shell, or leave the tip of the tail, depending on your preference.

Heat a pan with an inch of the oil. When it reaches 325 degrees, it’s ready for frying.

Dip the shrimp in the egg, and shake off any excess. Then toss the shrimp in the flour mixture, shaking off any excess. Carefully place the shrimp in the pan of oil.

Cook the shrimp for about 45 seconds, flip them over, and cook for another 45 seconds, until they’re golden brown. Don’t crowd the pan and never over-cook shrimp!

Drain them on paper towels and serve immediately!

 

 

The shrimp are delicious by themselves, but here’s an easy remoulade to make along with them…

1 cup mayo (I like Hellman’s)
1/4 cup Gulden’s mustard
1/4 teaspoon granulated garlic
1 tablespoon dill pickle relish
1/2 teaspoon Frank’s Red Hot
Pinch cayenne pepper
1/2 teaspoon salt
1/4 teaspoon white pepper

Combine the ingredients and keep in the fridge until ready to use.

 

It’s a bit of a cheat, but I find the Paul Prudhomme Seafood Magic seasoning has great flavor and works really well for this. I also use it on fish: simply pan sauté a filet in butter, and sprinkle on the seasoning. I originally started with the small jar found in most supermarkets, but then quickly graduated to the jumbo size can found online!

 

 

If you want to make your own seafood seasoning, a combination of salt, pepper, garlic powder, onion powder, paprika and cayenne will get you a result that’s pretty close to the Prudhomme seasoning.

 

 

Pork chops were a favorite of mine growing up, but my Mom cooked them only one way: breaded and fried in a pan full of oil. They were good, but they were greasy, and my Mom was not big on seasonings. And she cooked the hell out of it. It was time to improve on the original.

Using the best quality pork I can get, like heritage Berkshire pork, makes a real difference in flavor. It also matters to me that the animals are humanely treated while they’re on the farm. No factory-farmed meats.

2 Berkshire pork chops
1 egg
1/2 cup plain bread crumbs (gluten-free works, too)
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried oregano
1 teaspoon dried parsley
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
olive oil

 

Pre-heat the oven to 350 degrees.

Set up 2 bowls. In one, crack and scramble the egg. In the other, combine the bread crumbs, salt, pepper, oregano, parsley, granulated garlic and granulated onion.

Place an oven-proof pan on medium-high heat and add a little olive oil. Once the oil is hot, coat the pork chops in the egg wash and then coat them with the bread crumb mixture. Place the chops in the hot pan to brown and sear on one side. After a few minutes, flip the chops over in the pan and place the pan in the oven to finish cooking.

Remember, good pork does not need to be cooked to death! A light pink to the meat is OK. You want to cook the meat to about 145 degrees, letting it rest for at least 3 minutes before serving.

 

 

 

Like hot dogs and Slim Jims, jerky is one of those “mystery meats” we love but don’t really know how it’s made or what part of the animal it comes from. It’s also the only thing my nieces and my co-workers want from me, so I always make huge batches!
Really excellent beef jerky is a rare treat, and once you have it, you will never go back to that rancid, preservative-filled dog meat you find in a bag at the supermarket. And the best part is: it’s easy to make.
Shop around for a really nice slab of London Broil or similar cut. You don’t need to buy an expensive piece of grass-fed beef, but the better the meat, the better the jerky. Remove all the gristle and fat that may be on the meat and then slice it against the grain and on a diagonal, into 1/4″ thick slices. Toss all the meat in a Ziploc bag. Once you’ve done that, all you need to do is make the marinade, marinate the beef overnight, and then dry it the next day. Your final product will be a flavorful beef jerky that is so good, you’ll find it very hard to stop eating it…or to share it.
If you use gluten-free soy sauce and teriyaki sauce (La Choy is the brand I use, found in any supermarket), this recipe can be considered gluten-free. Be careful: regular soy sauce, and even some tamari sauces, have wheat in them. Read the label!
If you have friends that hunt and you can get hold of wild venison, not the farmed stuff, this recipe makes fantastic venison jerky!

1 1/2 tablespoons granulated garlic

1 teaspoon fresh minced peeled ginger
2/3 cup brown sugar
1 cup teriyaki sauce (I use La Choy)
1 cup soy sauce (I use La Choy)
8 lbs. raw, lean beef, like London broil, cut into 1/4″ thick diagonal slices, against the grain of the meat
Combine all the ingredients except the meat in a large bowl. Whisk it well. Place the meat in a large Ziploc bag, pour the marinade inside, seal it, and refrigerate it overnight. Squish the bag around once in a while, to make sure all the meat surfaces make contact with the marinade. Keep the bag in a bowl to prevent any accidental spillage in your fridge!
The next day, pour off the marinade and discard it. Using a food dehydrator, dry the meat by laying strips in a single layer. You can also dry them in a 140 degree oven on racks slightly elevated off a baking sheet. Drying could take several hours to half a day, depending on how dry and chewy you like your jerky, and how thickly you sliced it.

This recipe makes a lot of jerky, but it stores really well in the freezer. I put small amounts into individual freezer bags, then place all of them in one large freezer bag. Thaw as needed.

St. Patty’s Day is this coming Wednesday, so supermarkets are full of packages of processed corned beef in preparation for the big celebration. Too bad corned beef isn’t an authentic Irish dish!

The phrase “corned beef” was actually coined by the British, and although the Irish were known for their corned beef throughout Europe in the 17th century, beef was far too expensive for the Irish themselves to eat and all of it was exported to other countries. Owning a cow in Ireland was a sign of wealth, and the Irish used theirs for dairy products, not beef.

The Irish ate pork, and a lot of it, because it was cheap to raise pigs, and they traditionally prepared something like Canadian bacon to celebrate St. Patrick’s Day in Ireland.

In the 1900’s, when the Irish came to America, both beef and salt were more affordable, and the Irish, who lived in poor, tight-knit communities, often next to Jewish communities, bought much of their beef from Kosher butchers. And so many of the Irish learned how to corn their beef using Jewish techniques, but adding cabbage and potatoes to the mix.

It takes about 3 weeks to make corned beef. But now that you know it’s not Irish anyway, that’s OK! (If you’re dying to have it on St Patty’s Day anyway, just buy yourself a supermarket package this time, then make your own when the craving hits again.) Doing it yourself is not difficult. It just takes time…and you get a really delicious slab of beef.

Corned beef has nothing to do with corn. ‘Corning’ is a technique for preserving raw meats for long periods by soaking it in salt brine. This method was used in England before the days of commercial refrigeration. Back then, the large salt kernels used in the brine were called “corns.”

Brining is a time-honored way of preserving meat and it prevents bacteria from growing. Both pastrami and corned beef are made by this method. Both start with a brisket of beef. Corned beef is then cooked–usually boiled–and served. Pastrami is made when the brined meat is rubbed with more spices and then smoked to add extra flavor. So corned beef and pastrami are the same meat, just treated differently.

Saltpeter is an ingredient that has been used in brining beef for years. It adds the traditional red coloring to the corned beef and pastrami meat. But since saltpeter can also contain carcinogens, I usually leave it out. The meat may not be the usual bright red color, but the flavor and texture of the meat will not be affected.

Step one: corned beef…

beef brisket (about 8-10 pounds)
2 teaspoons paprika
1/4 cup warm water
3 cloves of minced garlic
2 tablespoons sugar
1 tablespoon mixed pickling spices
3/4 cup salt
2 quarts water

Place the brisket in a large container made of non-reactive material, like glass or plastic.

In the 1/4 cup of warm water, dissolve the sugar, minced cloves, paprika and pickling spices.

Dissolve the 3/4 cup of salt in the 2 quarts of water. Pour in the sugar/garlic/paprika/pickling spices mix and stir everything together. Pour the mixture over the meat in the container. Make sure the meat is totally beneath the surface of the liquid. (You may need to weigh it down to do this.) Cover the container.

Refrigerate the container and its contents for 3 weeks, turning the meat once or twice per week. At the end of the third week, remove the container from the refrigerator and take out the meat. Soak the meat in several changes of fresh cold water over a period of 24 hours to remove the excess salt.

At this point, if you want corned beef, prepare and cook it using your favorite recipe. But if you want pastrami…

Step two: making Pastrami…

1/4 cup Kosher salt
1/4 cup paprika
3 tablespoons coriander seeds
2 tablespoons black peppercorns
2 tablespoons yellow mustard seeds
1 tablespoon white peppercorns
3 tablespoons brown sugar
1 tablespoon granulated garlic

Combine the coriander seeds, black and white peppercorns and mustard seeds in a spice grinder and grind them coarsely. Place them in a bowl. Add the salt, paprika, brown sugar and granulated garlic. Mix well.

Rub the mix into the brisket well, covering all sides.

Heat your smoker to 225 degrees and smoke it for several hours. (My wood of choice is always hickory.) When the internal temperature of the meat has reached 165 degrees, it’s done. It isn’t necessary to smoke pastrami as long as you would a regular brisket because the long brining time makes the meat tender.

It is very important that absolutely everything that comes in contact with the meat is very clean. (This includes your hands.) Also, make very sure that every inch of the meat reaches the 165 degrees before it is removed from the smoker. The corned beef is now pastrami.

Delis that serve pastrami go one step further: they steam the meat so that it becomes incredibly tender and easy to slice. I place a baking pan with boiling water in the center of a 350° oven. I put a grate on top of it, placing the pastrami on top of the grate. Then I invert a bowl over the pastrami to keep the steam in. I will cook it this way for at least an hour to steam the meat.

 

Happy St. Patty’s Day!

As the warmer weather slowly makes its way to New England, I start dreaming about the opening day of one of my favorite seasonal seafood restaurants: The Back Eddy in Westport, Massachusetts.

One of their best-selling appetizers is deviled eggs. Years ago, they would top those deviled eggs with raw tuna, and I ordered it every time I dined there.

But when they took that dish off the menu, I had to take matters into my own hands.

My version has none of the finesse of their original dish, but it has a lot more tuna and all the flavor…which works for me!

6 hard-boiled eggs
1/4 cup + extra mayonnaise
8 oz. high quality raw tuna
3 tablespoons soy sauce
1/2 teaspoon chili oil
1/4 cup finely chopped scallions
1 teaspoon sesame seeds
handful fresh spinach, or cucumbers (see below)

My favorite method of hard-boiling eggs is to put them in a pot of cold water. Turn the heat on high and bring it to a boil. As soon as the water boils, take the pot off the heat, and cover it with a lid. Let it sit for 15 minutes. Perfect eggs every time. Remove the eggs from the water and cool them in the fridge, or in a bowl of ice water if you’re going to be serving this dish right away.

Here in Rhode Island, very often I can get fresh tuna right off the boat. Ideally, they say you should freeze all raw seafood before eating it. In general, killing parasites requires freezing and storing fish at a surrounding temperature of -4 degrees Fahrenheit or colder for seven days; or freezing at a surrounding temperature of -31 degrees or colder until the fish is solid and storing at the same temperature for 15 hours; or freezing at a surrounding temperature of -31 degrees until the fish is solid and storing at -4 degrees or below for 24 hours.

That’s way too much of a hassle.

I find that I can get high quality tuna already frozen into convenient bricks at Whole Foods or on-line at websites like Vital Choice, one of my favorites for extremely high quality, responsibly sourced seafood.

 

I always try to buy responsibly sourced, fair trade seafood, like this beautiful ahi tuna.

 

If the tuna is frozen, I let it thaw a little. If it’s fresh, I place it into the freezer for about 10 minutes to firm up. That makes it easier to cube up. I slice the tuna carefully into the smallest cubes I can make. Once done, I place the tuna in a bowl and put it back in the fridge to continue its slow thawing until ready to use.

In a separate small bowl, I combine the soy sauce and the chili oil, and set it aside.

I finely chop the scallions, and set them aside.

Once the eggs have cooled, I peel them and cut them in half. I scoop out the yolks and place them in a bowl, starting with 1/4 cup of the mayonnaise, adding more if needed. I use a fork or whisk to get as many of the lumps out as possible. If I wanted to get serious, I could put them in a blender or food processor to make a creamy puree. An option is to place the puree in a piping bag and carefully squeeze it out into each egg half. I simply use a spoon.

Once all the egg halves are filled, I place them on a spinach leaf-covered dish and put them back in the fridge until ready to serve. Or, instead of the bed of spinach, I peel a cucumber and cut the ends off, then slice the cuke into 1/2″ thick slices. Using a melon baller, I carefully scoop out the seeds from the center to make a “cuke donut.” I use these as little stands to hold the eggs on the plate.

When it’s time to serve, I take the tuna out of the fridge, pouring the soy sauce/chili oil mix into the bowl with the tuna and I mix well. I let the tuna marinate for just 2 minutes, pouring off the excess marinade. I don’t want it to marinate too long, or it’ll get very salty.

I remove the plate of eggs from the fridge and carefully put a small spoonful of tuna on top of each one. I garnish with the sesame seeds and the chopped scallions and serve immediately.

Back from a vacation down South, visiting some old friends. It was a blast, but nothing says “I’m home” like a favorite childhood dish I would eat as often as I could get my Mom and grandmother to make!

I think I spent half of my childhood in the kitchen, watching my Mom and grandmother make koldūnai (kohl-doo-nayh), the Lithuanian version of a pierogi, by hand, at lightning speed. They would roll a simple dough into a log about 1″ in diameter, then cut it into 1″ pieces, twirling each piece between their fingers to make a flat pancake, filling each with a small spoonful of meat or mushrooms, then fold it over, crimping the edges to make a crescent-shaped dumpling. It blew my mind that they could crank out over a hundred of these little masterpieces in no time, placing them on a cookie sheet and freezing them until it was time to cook.

 

 

 

 

 

 

One of the main reasons why I prefer Lithuanian koldūnai over the basic Polish pierogi is the filling. For me, standard pierogi fillings like potatoes, cheese, and sauerkraut just don’t cut it. My Mom would mix ground beef with chopped onions sautéed in butter, a couple of eggs, and milk crackers soaked in milk. She’d add salt and pepper, then spoon that mixture beautiful beef blend into her koldūnai.

The other delicious stuffing, usually reserved for special holidays like Christmas Eve and Easter, was made from mushrooms. Italy may lay claim to the porcini, but the fact of the matter is, Lithuania is porcini heaven. And when they’re dried and reconstituted, their incredible flavor is so intense, you don’t need many of them to flavor a large amount of regular button mushrooms. We’d get our dried boletes from relatives in Lithuania every year. Mom would place a handful in some boiling water and let them steep until they swelled up and could easily be chopped and added to the other mushrooms. She’d then pour the mushroom liquid into the pan as well, not wasting a bit of that magical porcini flavor. The mushrooms were simply sautéed in butter, cooled, then used to fill the koldūnai.

 

I found that my Mom’s log method was too much work. I roll the dough out into a sheet with a rolling pin, then cut circles with a glass. Yes, that’s mac-and-cheese up front!

 

A few years ago, I decided it was time to try my hand at making koldūnai. As I recall, my Mom simply mixed water with flour to make the dough, kneaded it into a log, and off she went. I decided to go with the rolling pin and glass cutting method, because I found it to be a bit easier creating more uniform koldūnai.

The biggest challenges I had with making koldūnai was my own clumsiness and lack of experience. Once I got the hang of it, things moved along steadily, and it didn’t take long for me to make a decent batch–not all perfect, but not bad for a first try.

This time around, I made four kinds of koldūnai: traditional (ground beef as well as mushroom) and non-traditional (mac & cheese and pulled pork.)  Patty’s Pierogis, a restaurant in nearby Fall River, Massachusetts, and featured on Food Network’s “Diners, Drive-Ins and Dives,” is where my daughter first had mac & cheese pierogis. She was instantly hooked and begs for them every year.

Here’s my beef recipe…

1/2 onion, finely chopped
1 pat of butter
1 lb. ground beef
1 egg
1/2 cup breadcrumbs

Finely chop the onion and sauté it in the butter until translucent. Let it cool, then add it to 1 lb. of thawed ground beef. Add the egg and the breadcrumbs. Season with salt and pepper. Mix the ingredients thoroughly and keep the meat in the fridge until you’re ready to use it.

In my childhood home, you cannot possibly serve koldūnai without sour cream on the side and without spirgučiai (spir-guh-chay), chopped and fried bacon and onions that are sprinkled on top.

1 large onion, finely chopped

In a large pan, fry the chopped bacon until it’s almost crisp. Never drain the fat! Add the chopped onions and cook until they are soft. Set aside.  (My Mom always kept a stash of spirgučiai in a container in the fridge, and sprinkled them on anything and everything.)

Making the dough is simple.

2 cups all-purpose flour
1 cup water

I don’t use salt in the dough because I boil the koldūnai in salted water later.

Combine the ingredients in a bowl, mixing with your hands. Keep adding flour in small amounts until the dough isn’t wet and sticky. When it forms a nice ball, remove it from the bowl and place it on a floured surface and knead it a bit more. Cut the ball into quarters, and work with these smaller pieces of dough.

For the rolling-pin method, roll each quarter out until the dough is about 1/8″ thick. Cut circles out of the dough using a cookie cutter, rocks glass, or whatever else you have handy. Add about a teaspoonful of filling in the center of the dough, then fold the edges over and pinch them with your fingers. Flip it over and pinch again, making sure none of the filling seeps out. A tight edge means the koldūnai won’t break open when you put them in boiling water.

 

Who knew a rocks glass had more uses than just to hold a great Manhattan?

I recently discovered these “pierogi makers.” You lay the dough in them, add your filling, and then close them. They automatically crimp the edges for you. They work pretty well…sometimes.

 

I always double-check the crimped edges, because your koldūnai will fall apart in the boiling water if you don’t seal them well!

 

Place the koldūnai on a sheet pan dusted with flour, and when you’re done, place the sheet pan in the freezer.

Sometimes the chef gets punchy after making koldūnai all day long!

 

Get a large pot of salted water boiling. Drop the koldūnai in gently, being careful not to overcrowd them. If the dough is thin, the koldūnai will be ready when they float up to the surface. A thicker dough will need longer cooking. The best way to know if they’re done is by taking one out, cutting it open and having a look (and taste!)

When plating, sprinkle generously with spirgučiai, and serve with sour cream on the side.

By the way…I have tried making these with gluten-free flour, but with limited success.. The dough needs to have elasticity to stretch and seal properly, and it kept falling apart in my hands. But there are many GF flours out there, and one may just do the trick. If you need to be on a gluten-free diet, you can still enjoy koldūnai by using GF flour for the dough and GF breadcrumbs in the beef. (I buy a loaf of frozen Uni gluten-free bread, toast it, then pulse it in the food processor until crumbly. Works great and they taste great, too.)

 

 

 

 

You’d think it would be Cinco de Mayo, but February 22nd is National Margarita Day.
My personal recipe uses no sour mix…just 4 basic ingredients. I still have a small stash of the HoneyBells mentioned here, but the original recipe, below, uses pineapple juice, orange juice, or a combination of the two. Cheers!
Every year around January, we get a shipment of Cushman’s HoneyBells. They look like fiery red bell-shaped oranges, but they’re not really oranges at all, and their season is very limited.

HoneyBells are a unique natural hybrid of Dancy Tangerine and Duncan Grapefruit. The plants are grafted to a sour orange root-stock, and when the tree reaches maturity, it looks just like a grapefruit tree…but with oranges growing on it.
I usually make my signature margarita with pineapple juice. But when I get those HoneyBells in the mail, my recipe takes on a new twist:

2 oz. Patron silver tequila (3 oz. is even better!)
1/2 oz. Cointreau orange liqueur
4 oz. pineapple juice, orange juice or a combination (or fresh-squeezed HoneyBell juice, when in season)
1/2 oz. fresh-squeezed lime juice
Fill a cocktail shaker or tall glass with ice and add all the ingredients. Stir vigorously. Pour into a large margarita glass. Garnish with a lime wedge. Salt optional.
